</div><div style="text-align: justify;"><strong><em><span style="color: blue; font-size: large;">Procedura che uso io: divido a metà i frutti e tolgo il nocciolo; poi aggiungo 500 gr di zucchero e lascio riposare 12 ore in frigorifero, in modo che lo zucchero faccia uscire parte del liquido della frutta e quindi quando si cuoce diventa semigelatinosa; dopo questo passaggio, aggiungo il resto dello zucchero, la pectina e metto sul fuoco mescolando bene; da quando prende il bollore sempre mescolando lascio che si cuoce per circa 10 minuti, cimando la schiuma se necessario; dopodiché spengo ed invaso subito, tenendo i vasetti per circa 5 minuti capovolti, quindi li rigiro e lascio che si raffreddino del tutto. </span></em></strong></div>Per quanto concerne i vasetti ed i coperchi (quest’ultimi, sempre nuovi così si è sicuri che tengano il sottovuoto), li sterilizzo tenendoli in immersione per circa 20 minuti in acqua bollente.<br />
Per alcuni tipi di frutta uso la pectina poiché il colore ed il sapore restano inalterati nel tempo ed in più perché a me piace sentire il pezzetto di frutta. Inoltre le marasche, essendo una frutta un po’ asprognola, la sua parte semigelatinosa dolce (osservabile dal vasetto) ben si presta ad accompagnare gli arrosti di carne. <br />

Guardi nella dispensa se hai tutti gli ingredienti: 1 rotolo di pasta sfoglia, 1 vasetto della tua marmellata di prugne e fichi, qualche biscottino frantumato, e nella fruttiera un paio di mele. Calcoli il tempo di arrivo dei tuoi amici e decidi che puoi farcela. E......così fu! Ovviamente il tuo tocco ci vuole, non puoi servirli tal quali, quindi m'invento di spolverarli con zucchero a velo una volta cotti, reinfilarli qualche minuto nel forno et voilà, un fagottino coperto di un leggero strato caramellato.
